Eggplant Dip
Ingredients
1. One medium sized eggplant
2. 3 cloves of garlic crushed with the mortar and pestle to a smooth paste with half a tsp of salt
3. Juice of half a lemon
4. 3 tbsp tahini paste
5. 2 tbsp of yoghurt
6. 3 tbsp of olive oil

Method
1. Heat some oil in a pan. Add the eggplant, make a deep slit on the eggplant to prevent an explosion and also to cook it faster. Cover and cook till done, takes around 15 minutes. Check with the knife, if the knife pierces easily through the eggplant, it's done.

2. Put the eggplant into a bowl and remove the peels. Add the garlic paste and lemon juice to it. With a hand held mixer puree the eggplant into a smooth paste.
3. Add the yogurt and the tahini paste to the brinjal mixture. Adjust the salt as per your taste.(Don't forget that salt has been already added while crushing the garlic cloves into a smooth paste)
4. Drizzle Olive oil and garnish with paprika
Shrimps stir fry
Ingredients
1. 250 gm shrimps cleaned and deveined
2. Juice of half a lemon
3. 1 and half tsp chilli powder
4. Half tsp cumin powder
5. Half a tsp of ginger garlic paste.
6. 2 green chillies slit

Method
1. Marinate the shrimps for an hour (salt,red chilli powder, cumin powder, ginger garlic paste and lemon juice)
2. Heat some oil in a pan. Add the slit chillies and the shrimps. Fry the shrimps on medium to high heat for 10 minutes.
3. Once cooked, garnish with green onions and enjoy.
