Chicken Oats Porridge


Such a quick fix and very good for those days when you don't want to cook dinner, yet feel compelled to give the family a wholesome meal.

The best part: Gets ready in a jiffy and gives your crumbling conscience, a boost, perfect for the cool weather. Very versatile. Works well as a breakfast/lunch/dinner.

Serves 3 very hungry children

Ingredients

10 tablespoon oats
One litre of water
Half teaspoon garam masala powder
Half teaspoon  red chili powder
Pinch of turmeric
Half tsp coriander powder
One onion chopped
One tomato chopped
1 tsp ginger garlic paste
3 tbsp fresh coriander chopped
2 tbsp fresh mint chopped
200 gm boneless chicken: boiled in black pepper and ginger garlic paste and then shredded finely.

Method

Saute the onions in oil till they are nicely browned. Add ginger garlic paste and fry for a minute. Add the red chilli powder, garam masala powder and coriander powder.
Add the tomatoes and cover and cook till the tomatoes are softened. Add salt.
Add the shredded chicken. Cook for 5 minutes
Add the chopped herbs.
Add the oats and water and cook for 15 minutes.
Serve hot with lemon wedges.
